SEPPI 2017 Blanc de Blancs was produced in the traditional Champagne method. A base wine of 100% Chardonnay was fermented in 30% neutral french oak, 70% stainless steel before tirage bottling in April 2018. The wine aged in bottle for 19th months on lees before disgorging in October 2019 with a dosage of 3g/L.
This was Kelsey’s favorite wine this year to drink with Thanksgiving dinner. The rich texture and California fruit flavors balance perfectly with the vibrant acidity, lending to a wine that complements a range food (from turkey, stuffing and cranberries to curried butternut squash soup) while not overpowering any of them. The tropical notes in the Blanc de Blanc also make it fabulous pairing with Asian foods.
